1 handful fresh washed young spinach
1 tbsp. mascarpone
1 tbsp. sour cream
2 tbsp. grated parmesan
Black pepper from the pepper mill
1 shredded shallot

Open the oysters. Cut the spinach in fine slices and mix them with the other ingredients. Spoon some of this mix on the oysters and put each of them on a pellet of aluminium foil on the cooking plate. Once the oyster is warm, not hot, you serve them.
